It is a minimal preparation dish that always leaves you with a smile. 1 cup dry quinoa 2 cups H2O - place quinoa and H2O in a medium sauce pot and bring to a boil, reduce heat and cover for 10 minutes. - season with a dash of white balsamic vinegar and salt and pepper 1 each carrot (peeled and rough chopped) 3 cups H2O 2 TBL Extra Virgin Olive Oil - Bring H2O to a boil -Blanch the carrot till fork tender and then strain and reserve liquid -Place carrot into a blender and start to puree the carrot while adding the EVOO and H2O till consistancy -Season with Salt and Pepper 1 each u10 Scallop (beard removed) 1 TBL Olive Oil 1 Tsp Butter -Heat olive oil in a small skillet -Add scallop and sear, flip scallop once and add butter. With a spoon, ladle the liquid in pan over scallop until done. (Basting) To Plate! Use a ring mold to place quinoa on the plate. Then set the scallop ontop. Use a spoon to smoothly place the carrot puree around the quinoa. Garnish with fresh micro greens. If you do not have fresh micro greens you can use basil and mint.
