I've never had a Delmonico cut ribeye, but was not expecting the piece that came out on my plate. Isn't the delmonico cut of the ribeye at the end of the ribeye loin? It was good, but not necessarily what I expected.. I look forward to any feedback... On a side note... the ENTIRE staff of servers, managers, etc was fantastic. Fish Heads Posted January 13, 2017 Report Share Posted January 13, 2017 The connective tissue holding the steak shape may have been trimmed off. It's in some of the fat I believe. I've seen that happen a little bit before when I trimmed a ribeye too much, however, I have to agree, that one just doesn't look right.
