osunajavian Posted February 2, 2017 Report Share Posted February 2, 2017 preheat fryer at 350 preheat oven at 300 To make Braising Liquid: for 150 pieces. 2 Qts soy sauce 2Qts Ketchup 2Qts Hoisin Sauce 2Qts Water. 1Qt red wine 3 Cups of Honey 1lbs Sugar 1Qt pineapple Juice 8oz pineapple 1/4 paprika 3Tbsp Red chili flakes. Mix all Ingridients in a Pot bring to a boil and let simmer for about 15 mins. For the pork i used 2 tender loins. We start by removing the lip on the tenderloin. With your chef knife clean up the tenderloin trim excess fat. we are gona cut about 1 1/2 inch thick slices get as many slices as you can and we are going to Dice up each slice in square pieces 1.5" by 1.5". Once this is done we are going to put all square pieces in a sheet tray and lay them out. We will need a medium sized bowl and a box of cornstarch. we are gona grab to nice handfulls of the diced pork and coar with cornstarch. we will put pork in fry baskets and deep fry for until nice and golden brown. After all pork is fried we will let it cool down. once cool we will place some of the pork in a 2 inch pan and we will add braising liquid. we will cover with plastic wrap and Aluminum foil.. We will put in preheated oven at 300. for about 30 mins it could be more or could be less. so check your pork every 10 mins and at 15 mons rotate pan. For this demo i chose to pan braise a few pieces. once done remove from pans from oven let cool for a bit and plate. Garnish with small diced red pepper and scallions cut on a bias.. Utensils Needs 2 2inch hotel pans Tongs Metal medium bowl 3 sheet trays Parchment paper. Big pot Measuring Cups chef knife cutting board. Sanitizer water.
