Next marinade for at least 24 hours 2 cup olive oil steap juniper berries, toasted whole coriander 10 smashed whole garlic whole bayleaves and whole black pepper corns. Add gallon and a half veal stock bring to a boil add 1.5 cups of salt and reduce by1/3. Turn off and let cool add to 20# of ice to marinade meat.
